Food - The 8th Virtual Symposium!!!

Food for Thought!



Food is necessary for living things to grow and reproduce. We need minerals, vitamins, carbohydrates, proteins, and fat. We need water. These things are used for building structures, hormones, neural transmitters, and a liquid highways system. We have specialized body parts to deal with Food. The eyes, mouth, teeth, tongue, throat, stomach, colon, pancreas, gall bladder, kidney, liver, anus all seem vital.

Humans have five basic tastes: sweetness, sourness, saltiness, bitterness, and umami. I also add pungency or spicy/hot as taste. Taste and smell obviously are tied together. We need both to enjoy the tastes of food. It seems obvious our ancestral humans were opportunistic eaters, omnivores, and we appreciated many different food stuffs! From seaweed, fungus, bugs, grasses, roots, minerals and dirt, animals, fish, seeds and seed pods. I bet our ancestors ate carrion! We all had these choices and we needed to able to taste what was good or not. Usually bitter and salty foods are not healthy for us- poisonous and dangerous. Thus, we needed tastes buds to warn us. Sweet and sour and umami were the choice foods! Our tongue can also tell when things have a fatty consistency, which is good to know because fat is a high calorie meal, and who knows when we would eat again. Thus storing up calories was a must.

We have evolved to mix the tastes…combining and mixing different textures, tastes, and flavors. Our different cultures developed spices, herbs, salt, peppers, and umami seasonings to make our food experience more enjoyable. At first it was to hide that food was spoiled and we needed to cover up the rancid, but today we cannot live without it.

Here is my thought- Do you eat to live or live to eat? Do you savor your food? Do you appreciate how different food combinations bring out nuances and piquant flavorings? Do you appreciate umami? Or do you just eat to eat….and have the mentality of we all need calories to survive! I have met many people who just eat to live. They rush through meals as if it was a chore and so bothersome. I, on the other hand, believe in the philosophy of “living to eat” mentality. I appreciate umami and pungency. I appreciate mixing and matching flavors. I find eating a challenge. I am constantly searching for the new and weird flavors! I sing “food glorious food!” I revel in making my own Garam Marsala (you need this if you are going to make Tandoori Chicken by the way!). Here is one of my favorite quotes: Tell me what you eat, and I will tell you who you are (Jean Anthelme Brillat-Savarin).

I leave you with you with these questions: What do you eat? Do you stick to what you know (never pushing your boundaries)? Are you limitless eater (are open to try new things)? I eat therefor I am!!

I now know what umami means, thanks.
I eat because I'm hungry and because i enjoy the tastes and textures of food.
I'm not a fussy eater, though therwe a few foods I won't eat unless I was starving to death!

I agree with Midcoast, we are so fortunate to have access to such a variety of foods. I enjoy experimenting with different cultural foods, what a bounty!. I guess I am a "live to eat type

I'm adventurous with food and will try anythings, enjoying variety of smells and tastes. While cooking, I experiment trying out different combinations of ingredients and spices. I love food! And everything about it.

I live to eat ... when I eat and, therefore when I cook, which I love !
Thanks for learning me the word umami. I knew the principle,
but only was able to say "tou know, tasteless but savouring food,
as glutamate does in chinese food."

Conscious eating is the way to go.
I don't eat a lot, but I try to enjoy what I do eat.
The texture, the taste, savory with sweet, or crunchy with smooth?
All of it matters, including presentation.

What a nicely written challenge!

I find that the older I get, the more I am beginning to appreciate the finer things in life and explore new tastes and textures....both in and out of the kitchen.

I must say though, that after reading your post, strawberries and cream has suddenly regained its appeal...where's my heavy cream?

Oh, I live to eat, and am still looking at new things I can create in the kitchen.
There's always the old favorites, but the fun is in looking at a new recipe, tweaking it to my satisfaction, and ultimately the pleasure in experiencing the new sensations.

Yeah, I like the thought that my new concoction is probably much better than the original. Even more fun is just going "freestyle" and inventing something completely new.

lol...it was hard to find the right photo for my post...but alas...strawberries and cream is decadent and delicious! You seem to be a mixture of decadent and delicious also!

Wow VF - an excellent Blog! Yep, food is our fuel - keeps us going! I always listen to my bod - when I'm all full up, I stop! When a crave a certain something, even chock, I eat it! Breakfast is something I never go wthout - 'the' meal for the day I think? Yep, we are fortunate to be able to enjoy eating as well! Like seeing, "taste" imp!

Oh, absolutely put me in the camp of those who get an obscene amount of enjoyment from eating food, cooking food, and even serving food to appreciative eaters. Yep, knew umami... but you've done a fine service by promoting the concept!
