Tamales
Tamales The Mexican families around here make tons of tamales during the Christmas season. I always order a dozen or two just for a dinner before Christmas, or as a snack for times when the belly feels it needs a little feeding. All through this area there are little Mexican ladies who have food for sale. They go from business to business selling their bean, green chile, red chile, mixed (bean and green or bean and red) burros, tacos with homemade shells, tamales. I call these ladies, The Burro Ladies. Here in Arizona we call burritos, burros. I don't know why, just always have since I was a . But during the Christmas season, they make tamales, dozens upon dozens, hundreds of dozens of tamales and sell them. It's a way they make a little extra money. And they make people like me who don't always want to cook, happy to have a night off from cooking dinner. It's rare that they put meat in their tamales, it's usually just chile and cheese along with the masa. I always ask if they will make green chile with chicken or beef. I prefer chicken, but I don't often get it. Tonight, I got some with beef and green chile. mmmm dinner is fast and easy. And I love the tamales cold, warm, hot, whatever way. I hear that red chile is great for hang overs. It's rare that I get a hang over so I really don't know. I don't much care for red chile, but it's okay if I am hungry. My preference is green chile. MMmm, I think I want a beer with my tamale tonight. |

As a fellow Arizonian...I also love those tamales. I like the red chile ones with the olive inside. Where I used to work there was a lady who always started taking orders for tamales. Her mother made them and oh so good. Every year I'd order 2 dozen....they are good to keep in the freezer and heat one or 2 up every now and then. I love mexican food anyway....so tamales are always a special treat. It's a lot of work though...but tradition for many, many hispanic families.

I actually made tamales myself a couple years ago. My complaint about the ones I buy are too much masa. The ones I made were more meat and turned out wonderful, but it's hard work! The pork with green chile were my favorites. Have tongue, will use it. Repeatedly.
