Back in the Day: New Job


Back in the day, after I quit other, evil job, got a new one. A fresh start at "normal" life, the "job" was already on my records, so I thought would give it a shot.
Started working at a small donut shop, at the bottom, as the delivery/clean-up. Delivered about 300 to 400 dozen donuts to factories and churches in the area. When done delivering, would mop the floors, wash the mixing parts and other dishes.
Worked my way up to be the donut fryer, just frying yeast raised donuts, either plain (to be filled n iced, or glazed. All total, did 600 to 700 dozen a day for our shop, a satellite store, and the orders. Wasn't easy, had 2 left hands, clumsy as Hell at first! Over proofed some donuts, burnt some, along with my fingers. With time, and a million repetitions, got fast n good, not all clumsy or mistimed.
Got my chance to be lead baker, cutting the dough to make the donuts. That really made me feel like a clumsy, left-handed dork! All thumbs! Was so damned slow, the person frying donuts had to wait on me! After cutting the donuts, had to ice all the donuts, again was so clumsy n all thumbs! But, again, after doing the job over n over again, night in, night out, got faster than the owner. Worked there 10 years. But, it was much, much better than my "evil" job!!!!
Did that until I moved to Arizona, to a REAL bakery!

PS edit......This was back in the 1980's, not the present, still with my company now.

Dear, that was way back in the 1980's, I'm long past that! No new company now, still same one. Am a journeyman baker, actually way above what this company needs, as more items are not made from scratch anymore.

Isn't to many of them left here now, everything is in grocery stores now.

Yes, very true, even some donut shops don't make their own donuts from scratch. I do work in a grocery store bakery, only one who does make scratch breads, cookies, n sweet goods here. All the rest use frozen doughs, par-baked items.
